It turns out that "Christopher Chance" is a name that is passed down from bodyguard to bodyguard, from generation to generation. It's not exactly a real name -- rather, it's more of a code name for a hero. Majors says this: "It ain't really a name, least not one anyone was born into. ...'Christopher Chance' is the guy you go to when no one else can help."
