Anthony Bourdain Describes the Illegal Ortolan Dish on 'Colbert Report' (VIDEO)

Anthony Bourdain, 'The Colbert Report'Anthony Bourdain has experienced a lot of things and eaten a lot of exotic dishes throughout his career, but he may have peaked his unique culinary experiences with ortolan. Stephen Colbert just had to ask him about the protected bird dish on 'The Colbert Report' (Weeknights, 11:30PM ET on Comedy Central).

It was interesting that the eating of this bird, which some say is endangered, comes with it an entire ritual dating back hundreds of years. But the actual ingestion could be a bit too much for less adventurous palates.

"You take it by the head and stick it in your mouth and crunch down into the body, bones guts and all," he said. "It's sort of a hot rush of fat, guts, bones, blood and meat and it's really delicious."

While a lot of people love the romance of tackling something so forbidden and "dangerous," we think most people will probably pass on this particular treat, no matter how delicious Bourdain tells us it is.
