Some chefs wouldn't dare mess with classic cuisine. It's called classic for a reason, after all. Richard Blais isn't like other chefs. He believes it's his mission -- actually, his passion, too -- to experiment with classic foods, and he does so in a way that incorporates science, technology and creativity to engineer new and improved versions of iconic recipes. In ``Blais Off,'' Blais -- he was the eighth-season winner of ``Top Chef,'' the all-stars edition -- takes his experiments on the road, visiting some of the most popular eateries in the U.S. His mission? To put his scientific creations head-to-head against classic American dishes in battles between tradition and innovation.
